This easy and flavorful baked chicken dish brings together zesty lemon, savory garlic, and juicy tomatoes for a comforting meal, all made in one pan.
Ingredients

3 tbsp (45 mL) fresh lemon juice

8 garlic cloves, thinly sliced

¼ cup (60 mL) olive oil

1 tbsp (15 mL) + 1 tsp (5 mL) Italian Seasoning Mix

½ tsp (2 mL) salt

6 boneless, skinless chicken breasts (5–6 oz/150–175 g each)

4 cups (1 L) grape tomatoes (about 2 containers)

¾ cup (175 mL) Italian-seasoned croutons, crushed

2 tbsp (30 mL) butter
Directions

Preheat the Oven:
Set your oven to 375°F (190°C). -
Prepare the Baking Dish:
In a Stone Rectangular Baker, combine the lemon juice, garlic slices, olive oil, Italian seasoning, and salt. Stir well to mix. -
Assemble the Dish:
Place the chicken breasts in the baker. Arrange the grape tomatoes around the chicken. Evenly sprinkle the crushed croutons on top of the chicken. -
Bake:
Bake the dish uncovered for 30–35 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Once done, remove the chicken and keep it warm. -
Finish the Sauce:
Add the butter to the tomato mixture in the baker. Use the Salad Chopper to carefully chop the tomatoes into coarse pieces, creating a rustic sauce. -
Serve:
Return the chicken to the baker and serve warm with the tomato mixture spooned on top.
